Attilio Sciannimanica
Attilio Sciannimanica, is the Principal of CosmoreX Coffee Pty Limited, a specialty roaster situated in Canberra.
He has been roasting coffee and designing blends for the last 23 years, in addition to importing, selling and servicing commercial and domestic espresso coffee machines direct from their Italian manufacturers. The Company currently imports, amongst other things, the Diadema JUNIOR range of semi-commercial espresso machines, Macap commercial grinders, and the Rancilio Silvia and Rocky grinder range of domestic equipment.
Three Generations Coffee
The Sciannimanica family can be justifiably proud of its journey in coffee. It moved to Canberra in 1963 from Sydney bringing with it a wealth of expertise, established its first business in the area, and introduced quality espresso where there had been none before.
Three generations have carried on in the family businesses, culminating in the well known local brand name of CosmoreX Coffee.
At its Fyshwick premises, coffee class attendants and special guests will find one of the worlds most renowned coffee roasting machines with which the family
roasts fresh for the local market, and it imports its own brand of Italian espresso machines. Family member Attilio is on the panel of Coffee Judges to the Royal Agricultural Society of NSW. He has also been a volunteer for a well known Australian aid organisation, and in 2001 was placed in a developing country to oversee the set up and commencement of a fledgling coffee roasting business.

New Eco Friendly Roaster
New Eco Friendly roaster arriving soon. Very shortly CosmoreX Coffee will take delivery of its new eco friendly “smokeless” roaster, specially commissioned by Attilio during a recent visit to Italy. It roasts coffee without need of an afterburner, uses less gas and emits less CO2 than both traditional drum and fluid air bed roasters. On any given machine, different roast masters will roast differently and achieve different results. Our new eco
roaster is a precision instrument that will aid us in achieving a specific and repeatable result. And, the special way that it delivers the hot air into the drum eliminates hot spots, helping to achieve a much more uniform roast than can be obtained from the traditional methods. Tipping is eliminated, and flavour is enhanced. This equipment fits our philsophy and style, as an “artesan” rather than a “commodity” roaster.
Cosmorex Coffee Training
CosmoreX Coffee also operates a private training center, offering training to the public and to the industry in the proper management and operation of espresso brewing equipment to produce a quality brew, as well as to the general public on the interesting and vast topic of “coffee appreciation”.
In 2001, Attilio was asked to volunteer his services as an Australian business aid volunteer for the AESOP organisation, and was sent to a developing country to oversee the set up and commencement of a new coffee roasting venture.
- was asked to comment during the formulation of Australian Standard THHBFB12B: “Prepare and Serve Espresso Coffee” (part of the Australian Hospitality Training Package);
- consulted to John Doyle on matters technical in the writing of his espresso training manual called “Barista Techniques, An Essential Guide To Preparing And Serving Espresso Coffee;
- has been admitted to the panel of judges of the Royal Agricultural Society of NSW, coffee section;
- conducted coffee appreciation and ”espresso school” classes in the A.C.T’s further education system and
- conducts coffee demonstrations on the Cooking Stage at Canberra’s annual Home and Leisure Show
- is an accredited AASCA sensory judge in the Australian Barista Championships
